Texas Flame and Smoke: Texas Wine Lovers, Your Attention Please!
It’s not often that I come out and do a testimonial. If I do, it has to be something that I think is special and offers a high-quality experience. In this case, it is something that I found by accident. As a result of being a judge in the amateur wine competition at the Austin Country Fair, I received a gift basket that included a bottle Haak Vineyards Blanc Du Bois (thank you very much), a couple of wine glasses, some odds and ends and a bottle of what I thought was merely just another BBQ seasoning. Boy was I wrong!
The seasoning in the basket turned out to be a dry rub called Texas Sweet made by Texas Flame and Smoke that quickly became my go-to dry-rub seasoning for pork ribs, chicken and beef brisket. The balance in the seasoning (especially between the hot-spice flavor and sweetness) was spot on. The only problem was when I ran out of my Texas Sweet, I couldn’t find it in any stores in Houston or Fredericksburg. After giving up that search, I finally found Texas Flame and Smoke’s website at texasflameandsmoke.com.
Lo and behold, a simple online purchase from the Texas Flame and Smoke website resulted in getting my Texas Sweet again and also finding another great spice blend, Texas Flame and Smoke Lemon Pepper (aka Texas Zest). I’ve been a long-time user of this type of spice (particularly on fish and vegetables), but Texas Flame and Smoke’s Lemon Pepper is the best one I’ve ever used, by far! I’m now figuring how to use their Merlot Salt and Chicken Seasoning.

Texas Flame And Smoke is a small family-owned and operated business located in Bryan, Texas. After retirement from other professions, Bobby and Kay Jarrett began looking for something to keep them busy. For years, family and friends had been encouraging Bobby to bottle his BBQ sauces and seasonings, so the business began as a challenge to produce the best tasting BBQ sauces in Texas.
In 2014 they began developing and testing their recipes in their home kitchen in Bryan, Texas. Bobby developed the recipes while Kay conducted the testing and, of course, the tasting. In October of that year, the business was incorporated and co-packers were selected to package their products. The first bottle of their BBQ sauce was sold in May of 2015. Since the original offering of sauces, the business has been expanded to include BBQ dry rubs, seasonings, and specialty salts.
Last year saw the addition of three new seasonings and two new sauces. The seasonings use mesquite smoked sea salt as the salt ingredient, imparting the taste and aroma of Texas and the great Southwest. The two new sauces were developed using Texas honey as the only sweetener and hickory smoked sea salt as the only salt ingredient.
This year Texas Flame and Smoke celebrated 5-years with a new line of seasonings was added using hickory-smoked sea salt for those preferring a more traditional aroma and taste of Southern grilling. Future additions to the product line will include a couple of hot sauces that Bobby still has in the planning stages.
Texas Flame And Smoke is a private labeler and all of their products are co-packed in the Houston area using their proprietary recipes. The company consists of Bobby and Kay Jarrett with occasional help from their daughters and their families. Bobby serves as company president and is in charge of manufacturing and distribution while Kay serves as Secretary/Treasurer and is in charge of marketing and sales.
