Speaker Spotlight
This year’s Camp Commander… Dr. Bobby Smith, Owner/Winemaker, La Buena Vida Vineyards Springtown, has produced Texas wine for over 30 years. He is responsible for laying the foundation for the legislation that has supported the growth of our industry. In addition to his winemaking and medical practice, Dr. Smith has taught college chemistry for almost 10 years. He has successfully fermented dessert wine to 20%, produces Texas sparkling wine by method champenoise, and most recently started to produce several Texas cheeses.

Ken Fugelsang, Associate Professor of Enology and Winemaster Emeritus, California State University, Fresno has supported our Enology Outreach program since its inception. He started the first commercial winery at a major university and has served as its Wine Master. He has published countless research publications and currently is co-author of the industry text in microbiology. In addition to his talks at boot camp, Ken will be giving hands-on demonstrations in microbial analysis for small wineries.

Dr. Randy Worobo, Associate Professor of Food Microbiology, Cornell University, has extensive knowledge in winery, beverage and food processing plant sanitation and has worked with various industries on sanitation programs. He is a member of the FDA Juice HACCP Curriculum Committee and a certified Juice HACCP Train the Trainer. He will be leading a session on Winery Sanitation Best Practices.

Dr. Barry Gump, after 40 as Professor Emeritus in Chemistry at Fresno State, Dr. Gump now is a Professor in Beverage Management at Miami International University. He is co-author of what is considered an industry standard text in wine analysis and production. He has been an Associate Editor for the Journal of the American Society for Enology and Viticulture (1987 – 2007), and reviews technical manuscripts for a number of national, international, and trade publications. Dr. Gump has been a professional wine judge for many years at a number of major wine competitions, including the San Francisco Chronicle Wine Competition. Dr. Gump will focus spectrophotometry as to relates to understanding and measuring color, as well as looking at tannins and phenolics.

Dr. Roy Mitchell. Professor Emeritus Grayson County College and Winemaker Homestead Winery, has taught most of the people currently making wine in our State. As the developer of Mitch Lab he has promoted affordable ways to perform ongoing wine analysis in small wineries. Dr. Mitchell served as Camp Commander at our first Wine Quality Boot Camp last year and will be providing hands-on demos of several Mitch Lab techniques ion day two.

Dr. Justin Scheiner, Professor Grayson County College, as a native Texan, has recently received his doctorate in Viticulture from Cornell University will focus his discussions on dealing with color issues in the vineyard.

They will be examining Color, including basic measurement techniques and small winery Wine Analysis Best Practices. Bring your own wines for analysis.
