Video Highlights from Last Year’s Rattlesnake Round-Up: What Texas Wine do You Serve with Rattlesnake?

My wife and I drove up to our cottage in Fredericksburg, Texas yesterday and are leaving shortly for the drive up to Sweetwater, Texas for the Sweetwater Jaycee’s 2010 Rattlesnake Round Up (www.rattlesnakeroundup.net). I have my stash of Texas wines and was searching for clues as to what wines might work with cooked rattlesnake. I found this video that had a few to offer. The cooking method of choice in Sweetwater seems to be chicken fried. 

Rule 1 for Texas food and wine pairing: Just about anything and everything in Texas can be chicken fried, and you can get even money in a bet that it WILL be chicken fried at some point. Be ready with the right wine.

As you have seen before, I have done “chicken fried wine pairings” – the State Fair of Texas (http://vintagetexas.com/blog/?p=1220) and recently gave my input to John Demer’s blog related to chicken frying at the 2010 Houston Livestock Show and Rodeo (http://deliciousmischief.wordpress.com/2010/03/04/stuffed-on-fried-at-the-rodeo/).  In Sweetwater, I am looking to pair Texas wines that either have crisp acidity, good fruit qualities and, for the red wines, have a lighter body without too much oak. I have also read a post on the Wine Spectator Online that relates a fine dinning experience where rattlesnake cut into small pieces and was served like escargo with garlic and snail butter and worked well with a nice French Chablis.

Rule 2 for texas food and wine pairing (and my main mission for tomorrow during the hunt): Try not to get bit by a Rattlesnake before the pairing.
